Chocolate Biscotti Recipe!!

Biscotti!! Chocolate Biscotti!!

This is a really easy recipe for a treat that can be stored in a tin and last a relatively long time. PERFECT for guests when they come for a cuppa~

1 3/4 cups plain flour

1 1/2 tsp baking powder

1/4 cup cocoa powder

3/4 cup sugar

3/4 cup blanched almonds (or cashews, whatevs)

3 eggs

2 1/2 tsp vanilla essence

1- Preheat oven to 160C

2- Mix dry ingredients

3- Add eggs and vanilla essence and mix well into a dough

4- Divide dough in two

5- Place dough on floured surface and knead until smooth

6- Shape into logs and flatten (Note I made a bit of a mistake with mine – if the almonds are too close to the surface it can make it a bit crumbly and difficult to cut later on – live and learn!!)

7- Place logs on tray with non-stick paper and bake for 35 mins

8- Remove from oven and allow to cool completely

9- Cut logs into slices 5mm thick and place on baking trays with non stick paper

10- Bake on each side until crisp
